ICoMST began in 1955 at the Finnish Meat Research Institute as a Europe-centered academic gathering of meat scientists (EMMRW). As the number of participating countries and its scale expanded internationally, it was renamed ICoMST in 1987, its current name, and it is now held annually, rotating among host countries. It has established itself as the most authoritative international academic conference in the field, broadly covering the entire process from meat production to processing, distribution and consumption. This is the first time it has been held in Korea since the 2010 Jeju congress, a gap of 16 years.
This year’s theme is ‘Big Step Forward to the Future Meat.’ The congress will address a wide range of agendas, including sustainable production systems and shifting consumption patterns, artificial intelligence (AI)-based smart factories, processing technology innovation, and meat and health. The aim is to look broadly at the direction of a meat industry that responds to climate and environmental burdens and changing consumer perceptions, beyond simply improving productivity.

Through special presentations, NIAS will introduce its latest research achievements, including efforts to raise the value added of Hanwoo (Korean beef), the development of livestock by-products into functional materials, and color-change indicator films that reveal the freshness of chicken. Through these, the institute plans to showcase Korea’s research capabilities to the world and broaden the basis for cooperation with overseas research institutions and industry.

The congress also holds great significance for domestic consumers and livestock farmers. As the technological trends and consumption shifts of the global meat industry are shared in one place, it can lay a research foundation that leads to quality management and higher value added for domestic livestock products, as well as securing safe food.

Cho Yong-min, director of the National Institute of Animal Science, said, ‘This congress, which brings the world’s leading scholars together in one place, is an important opportunity to raise the standing of Korea’s meat industry and expand international joint research,’ adding, ‘We will strengthen industrial linkages and technology development to lead the future meat industry.’
